I'm 22 and I live on the North coast of Scotland, where the wind basically runs my schedule. I love cooking seafood — mostly whatever I’ve pulled from the shore that morning. Mussels, crab, fresh haddock. I’m obsessed with simple stuff: a pot of Cullen skink on a cold day, scallops with sea herbs, oatcakes straight from the pan. The sea gives it to me, so I try to treat it right in the kitchen. When I’m not cooking, I’m probably wild swimming. Lochs, sea pools, anywhere cold and clear. It’s bracing and it clears my head. I spend a lot of time walking the cliffs too, watching ospreys and collecting driftwood and looking for fossils; even see some dinosaur footprints if you know where to look! The Highlands are quiet in a way that makes you pay attention. For me, cooking, nature, love are the same thing. Use what’s around you, take care of it, and share it.
